The best part about this bright green chutney is that it retains the bright green color even after it's stored for a few days. Serve this on sandwiches, alongside curry and rice, or as a dip.

ingredients

  • 2 tablespoons peanuts
  • 1 teaspoon cumin seeds
  • 1 teaspoon sugar
  • Green chilis
  • Chunk of ginger
  • 5 curry leaves
  • 4 spinach leaves
  • Handful of fresh coriander
  • Lemon juice
  • 5 ice cubes
  • Salt to taste

Method

  • Step 1

    Grind peanuts, cumin seeds, sugar, green chilis & a small piece of ginger into a coarse powder.

  • Step 2

    Add in 4-5 Curry Leaves, spinach, coriander (make sure it is freshly washed lemon juice and ice cubes. Blend to combine. Do not add any water.

  • Step 3

    Lastly add in the salt, mix well and store for up to 5 days in an air tight container. (Do not blend after adding salt, just mix gently, this step ensures the green color retains when stored)
