- 1 (10 ounce) can Red Gold® Original Diced Tomatoes + Green Chilies
- 1 (10 ounce) can Red Gold® Mild Diced Tomatoes + Green Chilies
- 1 cup frozen corn
- 1 (15 ounce) can black beans, drained and rinsed
- 1 pound chicken breast
- 1 packet taco seasoning (or 2 tablespoons homemade taco seasoning)
- 1/4 cup chicken broth
- 24 corn tortillas
- Cooking spray (optional, for extra crispiness)

Cilantro Lime Crema:
- 1/2 cup sour cream
- 1 ripe avocado
- Juice of 1 lime
- Handful of fresh cilantro
- Kosher salt, to taste
- 1 to 2 tablespoons water (optional, for consistency)
Method
Step 1
In a slow cooker, add chicken breasts, taco seasoning, Red Gold® Original Diced Tomatoes + Green Chilies, Red Gold® Mild Diced Tomatoes + Green Chilies, black beans, corn, and chicken broth.

Cover and cook on high for 4 hours (or low for 6 hours), until the chicken is fully cooked and tender.

Remove the chicken from the slow cooker and shred it using two forks.

Return the shredded chicken to the slow cooker and mix well with the tomatoes, corn, and beans.

Warm the corn tortillas to make them pliable.
