MINI Got the brilliant idea of mini quiches for the lunch box a while ago from @savvymomdotca Finally tried them for a quick breakfast today and they were a HUGE hit. For me, because I love that these can be made in big batches, and for the kids because they are so darn good!
MAKES 10 SERVINGS
30 mini frozen tart shells (unsweetened) - thawed
1 3/4 cup of milk
3 tbsp chopped parsley
1 tsp dijon mustard
1/4 tsp salt
1/4 tsp pepper
1 cup finely shredded cheese
1/2 onion thinly sliced
1/2 cup finely chopped fresh spinach
Chopped peppers, sliced turkey bacon, crumbled goat cheese, or feta, finely chopped sundried tomatoes, chopped green onions. POSSIBILITIES ARE ENDLESS - GET CREATIVE!!
M E T H O D
Preheat oven to 375 F. Place tart shells on baking sheet; divide add-ins of your choice among shells In bowl, whisk together eggs, milk, parsley mustard, salt and pepper. Pour into tart shells Bake in oven 20-25 minutes until pastry is golden and filling is just set.
Serve warm for breakfast, lunch or dinner!
Reheat leftovers in toaster oven or oven at 375 for 5 minutes
