ingredients
- 1 1/2 cups flour
- 1 teaspoons baking powder
- 1/4 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1 1/2 cups brown sugar
- 4 ounces (1 stick) butter, melted
- 1 teaspoon vanilla extract
- 2 eggs
- 1/2 cup cinnamon chips
- 1/2 cup chocolate, chopped
- 1/4 cup Astros
- 9 ounces (250 grams) Lotus Biscoff Cookies
Method
Step 1
Preheat the oven to 350°F and line a cupcake tray with cupcake liners.
Step 2
In a bowl, mix the flour, baking powder, baking soda, cinnamon and salt and set aside.
Step 3
In a separate bowl using a hand mixer, beat together the butter and sugar until light and fluffy, about 2 minutes.
Step 4
Add the vanilla and eggs to the butter sugar mixture and beat together to combine fully.
Step 5
Add the wet ingredients to the dry and gently fold.
Step 6
Add in the cinnamon chips, the chocolate chips and astros. Fold through and be careful not to overmix.
Step 7
Spoon batter halfway up the sides of the cupcake liners. Add in 1 spoonful of Lotus Biscoff cookies and top with another spoonful of batter.
Step 8
Bake until golden brown, about 25 minutes. Allow to cool and top with a scoop of ice cream!
