ingredients
- 2 cups self-raising flour
- 2/3 cup brown sugar
- 1 teaspoon cinnamon
- 1/2 cup coconut oil, melted
- 250 grams very ripe spotty bananas
- 1 teaspoon vanilla extract

- 3 tablespoons caramel sauce (can sub for a mix of 50/50 peanut butter + maple syrup)
- 50 grams dark chocolate, melted
- 1/2 cup roasted peanuts
Method
Step 1
Preheat the oven to 175 ℃/ 350 ℉ and line a baking tin with non-stick paper
Step 2
In a large bowl, combine the flour and sugar. In a blender, blend together the melted coconut oil, bananas and vanilla until a banana “milk” forms.
Step 3
Add the wet mixture to the dry and mix until a thick batter is formed. *Optional: fold in mix-ins of your choice like nuts, chocolate, berries etc
Step 4
Transfer the batter to the lined tin. Bake in the oven for 35-40 minutes until a knife inserted comes out clean.
Step 5
Allow the loaf to cool completely before decorating. Decorate the loaf by drizzling caramel sauce and melted chocolate, then top with roasted peanuts *Storage tips: in an airtight container at room temperature for 3 days, in the fridge for 5 days or in the freezer for 1 month
