ingredients

  • 1 cup dairy-free yoghurt
  • 1 scoop vegan vanilla protein powder
  • 2 rice cakes
  • 1 cup chilled coffee
  • Dust of cocoa powder
  • Optional: maple syrup or other liquid sweetener for extra sweetness

Method

  • Step 1

    In a bowl: add the yoghurt and protein powder. Mix well until no dry mix remains. Scoop 1/3 of this mix into the base of a round ramekin.

  • Step 2

    Dip the rice cake in coffee and layer over the top of the yoghurt 3. Repeat again, then finish with one more layer of yoghurt.

  • Step 3

    Dust cocoa powder over the top. Enjoy immediately or place in fridge overnight for a breakfast ready the next morning.
