ingredients
Salmon
- 1 whole wild salmon filet, approximately 2 pounds
- 4 vines orange cherry tomatoes
- 1 red bell pepper, sliced
- 1 shallot, sliced
- 1/2 lime, sliced
- Handful of kalamata olives
ingredients
Dressing
- 1 teaspoon sea salt
- 1 teaspoon paprika
- 1 teaspoon caraway seeds
- 1 teaspoon harissa
- 1 teaspoon sumac
- 1 tablespoon date syrup
- 1 tablespoon pomegranate molasses
- 4 tablespoons olive oil
- 3 minced garlic cloves
- 1/2 lemon, juiced
Method
Step 1
Start by mixing the dressing. Put all the ingredients in a bowl and mix it well. Set aside.
Step 2
Preheat the oven to 400F.
Step 3
Place the salmon on a baking pan with parchment paper.
Step 4
Arrange all the veggies around the fish.
Step 5
Pour the dressing on top of the fish and spread it out.
Step 6
Bake it on 400F for 20 minutes.
Step 7
Transfer the oven to broil for 5 minutes to get a nice golden brown color!
