In this comforting recipe, russet potatoes are stuffed with a mixture of baked potato, cream, sour cream, and cheese before they are topped off with broccoli and chives.

ingredients

  • 4 large russett potatoes
  • Avocado or olive oil
  • Kosher salt
  • 1/2 pound steamed broccoli
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon Kosher salt
  • 1 1/2 teaspoons black pepper
  • 1 teaspoon garlic powder
  • 1/2 cup heavy cream
  • 1/4 cup sour cream
  • 8 ounces cheddar cheese
  • 8 ounces colby jack cheese
  • 1/4 cup chives
  • Smoked paprika

Method

  • Step 1

    Preheat oven to 350F.

  • Step 2

    Clean & Pat Dry Potatoes.

  • Step 3

    Place potatoes on a foil lined baking sheet. Lightly coat each potato with Oil and lightly sprinkle salt on each potato.

  • Step 4

    Bake for 1-1.5 Hours or until potatoes are done.

  • Step 5

    Slice a then layer off the top of each potato and remove the inside potato filling and add to a bowl. Leave some potato inside the skin to maintain the structure of the potatoes.

  • Step 6

    With potatoes in bowl, add Butter, Salt, Black Pepper, Garlic Powder, Heavy Cream, Sour Cream, 6oz Cheddar Cheese, 6oz Colby Jack Cheese, Broccoli and Chives. Mix everything well.

  • Step 7

    Add filling back into each potato. Add remainder of cheese on top. Then, sprinkle Smoked Paprika on top. Bake at 375F for 15-20 minutes.
