ingredients

  • 12 Fresh Hibiscus Flowers (or 5-6 Teaspoons of Dried Hibiscus)
  • 1 Large Handful of Fresh Mint - Plus Extra for Garnish
  • 1 cup Sugar
  • 1 cup Berries - Plus Extra for Garnish
  • 1 Juice from 1 Lemon
  • Pimm's
  • Ice

Method

  • Step 1

    Firstly, remove the leaves, stem and pollen part of the hibiscus flower. Thoroughly wash the petals to remove any stray bugs and pollen.

  • Step 2

    Boil 4 cups of water in a saucepan and then turn off the heat once it reaches boiling point.

  • Step 3

    Next, add the sugar and stir until it dissolves.

  • Step 4

    Add the hibiscus petals and mint leaves and place the saucepan lid back on to lock in all of those lovely essential oils and aromas.

  • Step 5

    Allow to infuse for 10-15 minutes before straining out the petals and mint. It’s best to not over steep the petals or it will turn bitter.

  • Step 6

    Add the lemon juice and allow to cool a little.

  • Step 7

    In a jug, add lots of ice, berries and slices of orange. Pour over the hibiscus tea.

  • Step 8

    Add a shot of Pimm's, slices of oranges, berries, mint and ice to each glass and top up with the hibiscus iced tea.

  • Step 9

    Feel free to omit the Pimm's to enjoy a delicious Pimm's mocktail :)
