Grilled Lobsters With Ginger Butter
GINGER BUTTER<br> <br> 150 g butter<br> 2 cloves of garlic<br> 3-4 tbsp grated, fresh ginger<br> <br> Use tempered butter and stir in crushed garlic and finely grated fresh ginger until well mixed. <br> <br> Place the butter on a sheet of baking paper and roll into a sausage shape.<br> <br> Keep in fridge until you are ready to use it, the butter can be made several days ahead.<br> <br> If you are using live lobsters, make sure you boil them first. Split them lengthwise, remove the palaver and the stomach. Transfer to hot grill, place it shell down, add ginger butter, and salt and pepper to taste.<br> <br> Grill until the butter has melted and the lobster meat is warm through. Serve with finely chopped cilantro and lime wedges.
