ingredients
For the Crab Cakes:
- 1/4 cup mayonnaise
- 1/4 cup Annie's Organic Green Goddess Dressing
- 1 egg, beaten
- 1 teaspoon Worcestershire
- 1 teaspoon Old Bay seasoning
- 1 teaspoon mustard powder
- 1/2 cup chopped red bell pepper
- 3 green onions, thinly sliced
- 1 pound crab meat
- 1/3 cup buttery crackers, crumbled
- Flour, for dusting
- Neutral oil, for frying

For the Micro-Green Salad
- 3 slices of bacon, thinly sliced
- 2 teaspoons brown sugar
- 2 tablespoons Annie's Organic Green Goddess Dressing
- 1/2 cup pea shoots, or other microgreen
- Blue cheese crumbles, optional, as needed
Method
For the Crab Cakes:
Step 1
In a large bowl mix together the mayonnaise, Annie's Organic Green Goddess Dressing, beaten egg, Worcestershire, Old Bay seasoning, dried mustard, bell pepper, and green onions.
Step 2
Fold in the crab meat then crackers trying not to break up the crab too much.
Step 3
Portion the crap cakes into 2 ounce portions, then with dip in flour, flattening the cake into a patty and dusting the outside of the cake with flour.
Step 4
In a large frying pan (or griddle) add enough oil to cover the bottom of the pan once the oil is hot lay the patty in the oil and fry until golden brown (about 3 minutes) flip then fry the other side until golden brown. Repeat with remaining crab mixture
For the Microgreen Salad:
Step 1
In a small pot add bacon, enough water to cover the bacon and brown sugar. Bring to a boil on medium-high heat and simmer until all the water has completely evaporated. Then brown the bacon until crisp. Remove from pot and cool.
Step 2
Toss microgreens with Annie's Organic Green Goddess Dressing.
Step 3
Garnish with cool bacon and blue cheese, serve with crab cakes, and more dressing for dipping.
