Recipe

For the Spelt Flour Pie Dough

  • 2 1/ 8 cup spelt lour
  • 2 teaspoons sugar
  • 1 teaspooon Kosher salt
  • 1 cup unsalted butter, cold and cut into cubes
  • 6 tablespoons cold buttermilk
  • 1 teaspoon water

For the Strawberry Pink Peppercorn Jam

  • 2 cups strawberries, hulled and coarsely chopped
  • 1/ 2 cup sugar
  • 3/ 4 teaspoon pink peppercorns, ground
  • 2 teaspoons lemon juice
  • 2 teaspoons cornstarch
  • 1/ 2 teaspoon vanilla extract

Vanilla Glaze

  • 1 cup powdered sugar, sifted
  • 3 tablespoons buttermilk
  • 1/ 4 teaspoon vanilla extract
  • 1 tablespoon rainbow sprinkles

For the Spelt Flour Pie Dough

Method

  • Step 1

    In a food processor, add the flour, sugar, and salt. Pulse 4 times to combine. Add the butter and pulse until it resembles sand.

  • Step 2

    Then drizzle in buttermilk and blend to combine. Remove from food processor and form two dough squares. Then wrap with plastic wrap and chill in fridge for 30-45 minutes.

  • Step 3

    Whisk together egg and water for egg wash. Reserve.

For the Strawberry Pink Peppercorn Jam

Method

  • Step 1

    In a medium saucepan set over medium high heat, combine all ingredients except vanilla extract. Bring to a boil, then reduce to medium heat.

  • Step 2

    Simmer for 15 minutes, stirring frequently. Using a fork, smash down the berries occasionally to help them break down.

  • Step 3

    Remove from heat an add vanilla extract. Then cool to room temperature.

For the Assembly

Method

  • Step 1

    Once both jam and pastry dough is chilled proceed with assembly.

  • Step 2

    Take dough out of the fridge. Roll each dough square into a 9 x 12 rectangle. Roll a bit over so you can trim.

  • Step 3

    Then use a pizza cutter to cut each dough rectangle into 8 even rectangles. Use a pastry brush to brush the egg wash on each rectangle.

  • Step 4

    Add 1 tablespoon of jam in center of pastry. Cover with another rectangle. Use a fork to press around the edges to seal. Prick the top. Brush with egg wash. Set on a parchment lined baking sheet. Repeat with the rest of pastries.

  • Step 5

    Chill in fridge while oven preheats to 400°F.

  • Step 6

    Bake until golden brown, about 20 minutes. Cool completely before glazing.

Glaze

Method

  • Step 1

    In a small bowl, whisk together the sifted powdered sugar with vanilla and buttermilk until smooth. Then spread over cooled pastries. Top with sprinkles.
