Oat-kidney Bean Burger With Scallion & Parsley
RECIPE:<BR> Ingredients: <br> 1 can kidney beans drained and rinsed <br> 1 scallion minced <br> 1 carrot finely grated <br>1 cilantro minced <br> 1 parsley minced <br> 2 cups rolled oats <br> 1 teaspoon salt <br> 2 large eggs whisked <br> 2 tablespoon extra-virgin olive oil <br> 4 whole-wheat buns, grilled <br> Grilled onions, for serving <br> Green and red bell pepper <br> Chili sauce <br> Directions: <br> 1. In a bowl, mash beans into a thick paste and mix parsley, scallion, carrot, cilantro, rolled oats, salt, and eggs. <br> 2. Form mixture into 4 patties. <br> 3. Heat 1 tablespoon oil in a skillet over medium-high heat, directly on grill grates, and cook patties until golden brown, 5 minutes per side. <br> 4.
