Bbq Pulled Pork-n-slaw Empanadas

"Well another day, another dinner to make....
Considering how good the pulled pork was the other day, and cause I had so much left over as well, I decided that I should use it in another recipe....
So here's what I ended up with tonight...

First step was throwing together a quick dough and cutting out some rounds, then I took some of the left over barbecue sauce and mixed it with the pulled pork-which I chopped up a lil too.....

Then taking a heaping spoonful of the pork, as well as a nice forkful of coleslaw, I placed it into the center of my dough...
A dash of fresh parsley, and pink Himalayan salt, and then some egg wash to seal the edges...

Folded over my dough and crimped the edges with a fork; then brushed the tops of them all with the egg wash, and finished them off with some pink salt and a quick bake in the oven....

Once they were nice, and golden brown, I put them on my plate with a little bowl full of my homemade BBQ sauce with some parsley an chives for garnish....
