Half Baked Sweet Potato
Although not to visible there is half a baked sweet potato sitting under all that goodness This is my lunch of half a baked sweet potato on a bed of wild rocket with sprouts, coriander, fresh avo and a tahini dressing. Such an easy way of dressing up some simple ingredients!
