"I’m so happy it’s summer, & while things are a little different this year, cooking wholesome foods like this recipe I developed with @annieshomegrown (#ad) and @thefeedfeed is giving me a sense of normalcy. Perfect for a stay-at-home meal or socially distanced BBQ, this Black Bean & Quinoa Burger recipe is topped with both Caesar Salad and a garlicky Caesar Aioli made with @annieshomegrown Organic Caesar Dressing. I’ve been buying @annieshomegrown foods & dressings since I was a student at CU-Boulder (which is to say, a VERY long time hahaha). ingredients

  • 1/2 cup raw cashews
  • 1 (8 ounce) bottle Annie's Organic Caesar Dressing, divided
  • 4 cloves garlic, peeled
  • 1/2 lemon, juiced
  • 4 veggie burgers (store bought or homemade), cooked
  • 1 small head of romaine, cut into thirds horizontally, then washed and dried
  • hamburger buns, optional
  • sliced tomato, optional

Method

  • Step 1

    Soak raw cashews in boiling water for 5 minutes, and then blend with 2 tablespoons Annie’s Organic Caesar Dressing, garlic, lemon juice and ¼ cup of water. Blend until creamy. Set aside

  • Step 2

    In a medium sized bowl, toss the prepared romaine lettuce with 2 tablespoons Annie’s Organic Caesar Dressing. Set aside.

  • Step 3

    To assemble, add the prepared burgers to the bottom portion of the hamburger buns, then top each with tomato and ½ cup of the prepared Caesar Salad. Spread 2 tablespoons of the cashew cream on the top half of the bun, then place on top of the burgers.
