Banana Protein Bread

Perfect banana protein bread! All the goodness and none of the refined sugar, white flour and added chemicals of most of the ones you find in cafés or coffee shops. This one should keep you busy for a while filled with loads of protein - from the nut meal, eggs and Reflex protein powder and the amazing health benefits of the coconut oil that also keeps you fuller for longer.

Perfect Banana protein bread:

3 ripe bananas mashed
3/4 cup dates, seeds removed and soaked in boiling water for 10 minutes
3 tablespoons of tahini or nut/seed butter of your choice
3 tablespoons of melted coconut oil
2 teaspoons cinnamon
1/2 cup almond meal
1/4 cup coconut flour, sifted
1 cup Reflex Instant Whey protein powder- vanilla flavour
1 teaspoon baking powder
5- 6 eggs beaten (depending on size)
1 teaspoon of vanilla bean paste or essence
pinch of salt {you may wish to add some chopped nuts on the top or some sliced banana as we have done}

Preheat your oven to 180 degrees then grease and line your loaf tin with greaseproof paper.

Blend the bananas and dates and soaking water together until smooth. Add the remaining ingredients and mix until well combined. Pour mixture into the prepared tin. Bake for 30- 40 minutes or until an inserted skewer comes out cleanly. Just watch your loaf as it will burn easily. You can also make muffins with this mixture if you prefer.

Enjoy as a protein rich post workout snack or for breakfast - whenever you like really!
