ingredients

  • 2 14 oz jars EPIC Homestyle Savory Chicken Bone Broth
  • 1 tablespoon avocado or olive oil
  • 1 yellow onion, diced
  • 3 carrots, peeled and diced
  • 4 celery stalks, diced
  • 2 teaspoons minced garlic
  • 1 inch fresh ginger, minced
  • 3 cups rotisserie chicken, shredded, skinless
  • 1/2 teaspoon ground turmeric
  • 2 sprigs fresh rosemary
  • 1 1/2 teaspooon salt
  • 1/2 teaspooon freshly ground black pepper
  • 2 tablespoons fresh lemon juice
  • fresh parsley, for topping

Method

  • Step 1

    Heat oil over medium heat in a stock pot. Add the onion, carrot, and celery. Cook for 5 minutes or until onion is beginning to soften. Add the garlic;; cook for 1 minute or until fragrant.

  • Step 2

    Add broth, chicken, ginger, turmeric, rosemary, salt, and pepper, stirring to combine. Increase heat to medium-high. Bring to a simmer and cook for 10 minutes. Reduce heat to low and stir in lemon juice. Remove rosemary sprigs before serving. Garnish with parsley.
