Weekends are the perfect to have the time to make a leisurely breakfast. Adapted from Bacon and Egg Cupcakes from the "I Quit Sugar"cookbook by @_sarahwilson_, we baked the bacon first, before lining the muffin tins, and baked the eggs for less than 10 minutes, so that the yolks were still runny. (Mom's is the kale leaf cupcake, obviously...)
