- 1 cup (200 grams) cream cheese
- 1/4 cup fresh parsley (or your preferred herbs), finely chopped
- 1/4 cup finely chopped leek (optional)

- 8 sheets of phyllo dough (use 4 sets of 2 sheets each)
- 2 tablespoons unsalted butter, melted
- 2 medium potatoes, thinly sliced using a mandoline or grater
- 1 egg yolk, for brushing
- 1 tablespoon sesame seeds, for topping
Method
To make the filling:
Step 1
In a medium bowl, combine the cream cheese and chopped parsley until smooth.
To make the Galette:
Step 1
Preheat the oven to 350°F.
Step 2
Lay down 2 sheets of phyllo dough, brush lightly with melted butter, and repeat until you have 4 sets of 2-layered sheets (8 sheets total). Ensure each layer is evenly buttered.
Step 3
Place the cream cheese mixture in the center of the phyllo sheets, spreading gently to form an even circle. Be careful not to tear the dough.
Step 4
Optionally, sprinkle the finely chopped leek over the cheese. Then, layer the thin potato slices evenly over the top.

Carefully fold the edges of the phyllo dough towards the center, leaving some of the filling and potatoes exposed. Brush the folded edges with egg yolk and sprinkle sesame seeds on top.
