Chilled Avocado, Radish, And Basil Soup
Chilled avocado, radish, and basil soup for lunch. Spring lunch is served! I love the ease of a chilled soup. All the ingredients are tossed in the blender, and then chilled, until ready to serve. This is a delicate and creamy soup that has a nice herb backdrop from the basil. The sliced radishes on top are a must. One serving was a lot for me. I see this more as a tasting soup in shot glasses on a hot summer day.
