While we're on the topic of sexy roasted veggies... check these out! Scrub a few sweet potatoes and slice into rounds of even thickness. Toss in a bowl with some olive oil. Arrange on a parchment lined baking sheet and sprinkle with kosher or sea salt and freshly cracked pepper. Roast at 450 degrees for 25 minutes, turning halfway. These are so yummy! Sweet, salty, crispy and soft. They make an awesome snack straight from the pan, and can be tossed into so many different meals - rice bowls, salads, side dishes or whatever you can think of! Salad selfie! (I know, you've missed these 😊). Just a bit of spring mix, half a yellow pepper, the end of a cucumber, a julienned carrot (you do have a julienne peeler, don't you?) and some diced beets. This was yummy with balsamic dressing. Mango salsa is perfect for topping grilled fish, chicken, tacos, or pretty much anything ?. Finely dice two ripe mangoes, a red pepper and half a red onion. Toss with a half teaspoon of cumin, some cayenne pepper, the juice of a lime, a drizzle of olive oil, and a bit of maple syrup or honey to suit your taste. Season with a pinch of salt if it needs it. To finish it off, chop in a bunch of fresh cilantro. Boom! The perfect colourful condiment for summer meals. I love the simplicity of summer meals. Leftover grilled salmon makes the perfect lunch, paired with sweet baby tomatoes and orzo salad. For the best side dish ever, cook a package of orzo pasta. Drain and toss with the juice of half a lemon, a good drizzle of olive oil, and salt & fresh pepper. Chop up a huge amount of fresh baby spinach and crumble up some feta cheese. The eye-popping colours will wow your guests, and our yummy dip will please any crowd. Recipe: In a high-powered blender or food processor, blend up one can of drained white kidney beans, a clove of garlic, 1/4 cup of olive oil, the juice of half a lemon, and a big handful of fresh parsley (or whatever herbs you have on hand). Season to taste with a bit of salt and a splash of hot sauce. Enjoy! Crispy, crunchy, sweet and salty. Simple lettuce wraps. Sauté one finely chopped onion with one minced clove of garlic and a tablespoon of minced fresh ginger. Add a pound of ground beef or meat of your choice and cook until browned. Drain off excess fat and season with 2 tablespoons tamari or soy sauce and 1/4 cup hoisin sauce. Serve in crispy lettuce leaves with a bit of cooked rice or grains (we used barley) and a rainbow medley of sliced veggies. We added carrots, cucumber and red peppers. I didn't have any cilantro, but it would've been great on top!
