Thai Chicken With Zucchini Noodles
Dear friends who love my wontons with peanut sauce recipe, you MUST try my Thai Chicken Zoodles. This is the third time I've made it (I think !) and it gets better every time! If I had to choose between the two dishes I might pick this one!
What I did: sautéed red and/or yellow bell pepper (~1/4 of a pepper) in 2 tsp toasted sesame oil (2). Once peppers started to soften I added 1 large spiralized zucchini and seasoned everything with salt, pepper, a little sriracha, and garlic powder. Once the zucchini was 90% cooked I added 3 oz shredded chicken (2) and almond butter sauce (3). Once the zucchini was finished cooking and the chicken was warmed through I topped everything with cilantro and green onions. The almond butter sauce was 1 tbsp almond butter mixed with 1 tsp coconut aminos (could sub low sodium soy sauce), ~1/2 tsp ginger paste (found in a tube in the produce section), ~1/2 sriracha, and 2 tsp water, mixed well.
