1 can (425g/15oz) black beans, rinsed
1 cup cooked basmati rice
1/2 a large onion, diced and browned
1/4 cup toasted walnuts or pumpkin seeds
2 chia eggs
3tsp curry powder
salt & pepper.
Method: add all ingredients to a food processor. Pulse until combined (you don't want the mixture too smooth; the mixture should still be a bit chunky). Form into eight small burgers patties. Spray a skillet/fry pan with cooking oil. Over medium heat, cook burgers until golden brown on both sides. Serve on slider rolls with lettuce, tomato, red onion, tomato and smashed avocado
