  • 1 cup (~200 grams) white chocolate, chopped
  • 4 heaping tablespoons pistachio spread, plus extra for drizzling
  • 2 1/2 cup (~35 grams) rice crispies
  • Pinch of salt
  • Toasted pistachios, chopped for garnish

Method

  • Step 1

    Place the chopped white chocolate in a microwave-safe bowl. Microwave in 10-second bursts, stirring after each burst until smooth and fully melted.

    Stir in the pistachio spread until completely incorporated.

  • Step 3

    Gently mix in the rice crispies and add a pinch of salt, ensuring the cereal is evenly coated.

    Spoon the mixture into 12 mini muffin silicon tray holes.

    Drizzle about 1/4 tsp of extra pistachio spread over each cup, swirling lightly with a toothpick or fork. If desired, scatter chopped pistachio nuts on top.

    Refrigerate the tray for 1 hour until the cups are firm and set.
