Yield: Serves or Makes 6
Add cilantro, jalapeño, shallots, garlic, ginger, fish sauce, lime juice, salt and basil to a blender and blend on high speed till you get a smooth paste.
In a pot, heat oil and add paste, cook until it is translucent, about 5-6 mins on medium heat. Stir frequently to avoid sticking at the bottom.
Add the coconut milk, cream and water. Bring to a simmer and add the sweet potatoes, cover and cook for until they are fork tender, about 10-15 mins.
Add bok choy, shrimp and snap peas. Cook for another 5 minutes or until the shrimp is cooked through.
Serve in bowls with fluffed rice. Garnish with peanuts, red chillies, lime wedges and cilantro.
