All About Pesto!

This week we've chosen to highlight pesto, the ever versatile condiment, which can be transformed into anything from a fragrant pasta salad, to a sauce for scallops or as a drizzle on top of eggs. To make this full menu multiply the summer pesto recipe by 4 to make enough for the week You'll need 4 bunches of basil, 2 cups of cheese and 1 cups of nuts—happy cooking!

Summer Pesto

This beautiful summer pesto is a great way to use up any leftover herbs or greens like arugula and spinach. Toss in whatever nuts you have in your pantry, Parmesan cheese and olive oil and you're good to go! Our favorite way to serve it is folded into warm pasta and topped with blistered cherry tomatoes and mozzarella.
