For the Salad:

  • 8 cups leafy green salad mix
  • 1/4 cup olive oil, divided
  • 2 limes, quartered, plus more for serving
  • 8 ounces cherry or grape tomatoes, halved
  • 1 small red onion, diced
  • 1 jalapeno, sliced
  • 1 avocado, quartered
  • 1 bunch cilantro, roughly chopped
  • hot sauce, for serving, optional
  • sour cream, for serving, optional
  • tortilla chips, for serving, optional

Method

  • Step 1

    Line a baking sheet or large cutting board with parchment paper, set aside.

  • Step 2

    Heat a large cast-iron or nonstick skillet over medium heat with 1 tablespoon oil. Add Cascadian Farm Powered By Plants Sweet Potato, Black Bean, Spinach and Farro Mix, cover, and cook until completely heated through, stirring occasionally, about 10 minutes.

  • Step 3

    Add veggie mixture to a food processor along with eggs, garlic, cheese, flaxseed, paprika, and salt. Pulse about 10 times until all ingredients are combined, leaving some larger pieces for texture. Stir if needed to fully incorporate.

  • Step 4

    Scoop about ¾ cup mixture and form into a patty. Place onto parchment paper. Repeat with remaining mixture for a total of 4 patties.

  • Step 5

    Heat remaining 1 tablespoon oil in the same skillet over medium heat. Add patties, cook for 4 minutes on each side, or until golden on the edges and cooked through the center. You may need to do this in 2 batches.

  • Step 6

    While the burgers cook, prepare the salad. Divide greens into four bowls. Drizzle each bowl with a tablespoon of olive oil and a generous squeeze of lime juice. Top each salad with a burger patty, tomatoes, red onion, jalapeño, avocado and cilantro.

  • Step 7

    Serve with a lime wedge and a drizzle of your favorite hot sauce or sour cream, chips, and a dusting of smoked paprika or taco seasoning.
