ingredients
For the smoothie:
- 1 1/4 cups coconut milk
- 1/2 cup Greek yogurt
- 1 1/2 teaspoons Jade Leaf Organic Ceremonial Matcha
- 1 teaspoon vanilla extract
- 2 tablespoons granulated monk fruit sweetener (or preferred sweetener)
- 2 - 4 tablespoons cream cheese
ingredients
For garnish:
- 1 cup strawberries, sliced, plus more for topping
- 1 tablespoon granulated monk fruit sweetener
- Coconut whipped cream (optional)
Method
Step 1
In a microwave-safe bowl, combine the sliced strawberries and 1 tablespoon monk fruit sweetener. Microwave on high for 2 minutes until syrupy. Let cool completely.
Step 2
In a blender, combine coconut milk, Greek yogurt, ½ cup of the sweetened strawberries, matcha, vanilla extract, sweetener, and cream cheese. Blend for 30 seconds, or until smooth and creamy.
Step 3
If using, pipe or spoon coconut whipped cream along the inside of your serving glass. Add a spoonful of sweetened strawberries and swirl gently along the sides of the glass for a marbled effect.
Step 4
Pour the smoothie into the glass. Top with more whipped cream and fresh strawberry slices. Serve immediately and enjoy!
