ingredients
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 3 eggs
- 1 cup olive oil
- 1 cup milk
- 1 teaspoon vanilla extract
- 1 lemon zest
- 3 tablespoons labneh
- 2 tablespoons orange juice
- 1 teaspoon honey
Method
Step 1
Preheat your oven to 350°F (175°C) and grease a 9-inch cake pan with olive oil.
Step 2
In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
Step 3
In a separate mixing bowl, beat the eggs until they're light and fluffy. Slowly add in the olive oil while continuing to beat the eggs.
Step 4
Add the milk, vanilla extract, and lemon zest to the egg mixture and mix until well combined.
Step 5
Slowly add the wet ingredients to the dry ingredients and mix until the batter is smooth and well combined.
Step 6
Pour the batter into the prepared cake pan and bake for 45-50 minutes, or until a toothpick inserted into the center of the cake comes out clean.
Step 7
Once the cake is done baking, let it cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Step 8
Serve your delicious and moist olive oil cake with your favorite toppings, such as whipped cream, fresh berries, or a dusting of powdered sugar.
Step 9
For top layer of the cake in a bowl, whisk labneh, orange juice and honey.
Step 10
Spread the labneh mixture on the top of the cake.
