There’s something magical about starting your day with a stack of warm, fluffy pancakes. Lately, I’ve been obsessed with matcha pancakes—not only do they taste incredible, but the vibrant green color makes breakfast feel extra special.

ingredients

  • 1 cup flour
  • 1 tablespoons matcha powder
  • 1 tablespoons sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3/4 cup milk
  • 1 egg
  • 2 tablespoons melted butter or oil
  • 1 teaspoon vanilla extract

Method

  • Step 1

    In a bowl, whisk together the dry ingredients: flour, matcha, sugar, baking powder, and salt.

  • Step 2

    In another bowl, mix the wet ingredients: milk, egg, melted butter, and vanilla.

  • Step 3

    Combine the wet and dry ingredients, stirring until just mixed (lumps are okay).

  • Step 4

    Heat a non-stick skillet over medium heat and lightly grease it. Pour about 1/4 cup of batter per pancake onto the skillet. Cook until bubbles form on the surface, then flip and cook until golden.

  • Step 5

    Serve warm with your favorite toppings—maple syrup, whipped cream, or fresh berries are all great options!

  • Step 6
