ingredients
- 4 cups rice noodles, soaked in water for 30 minutes then cut
- 3 cloves garlic, chopped
- 1 small knob ginger
- 1 zucchini, thinly sliced
- 3 scallions, chopped
- Handful snow peas
- Handful sugar snap peas
- 2 eggs
- 1/4 cup edamame
- Handful spinach
- Handful roasted cashews, or salted peanuts
- 1 bunch cilantro
- 2 limes
- 1/4 cup soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon fish sauce
- 1 tablespoon oyster sauce
Method
Step 1
Mix the soy sauce, rice vinegar, fish sauce and oyster sauce. Set aside.
Step 2
Heat oil in a wok and sauté garlic and ginger, stirring constantly, for 2 minutes. Add the zucchini, scallion, sugar snap peas and snow peas. Cook 2 more minutes. Mix the rice noodles and sauce into the wok and make a well in the center. Pour in the eggs and stir for 2 minutes, then add edamame and spinach and remove from heat.
Step 3
Garnish with cashews, cilantro and lime juice.
