Feta and roasted veggies family dinner

Recipe Card

ingredients

  • 3 organic carrots
  • 2 hands of organic baby potatoes in half
  • 1 organic zucchini cut into nice rectangles (manual on my instagram page @mypetite.lunchbox)
  • 1/2 organic red onion in quarter
  • 3 cloves garlic
  • 400 gram organic cheese (goat cheese, feta or halloumi)
  • 1 hand of cherry tomato on the vines
  • Few organic black olives pitted
  • Thyme, olive oil and salt

Method

  • Step 1

    Set carrots, potatoes and onion in a dish with olive, oil, garlic, salt and thym

  • Step 2

    Mix until all vegetables are well coated Cook in oven (180°) until your vegetables golden brown (+/- 50 minutes)

  • Step 3

    Add zucchinis pieces and a splash of olive oil and mix to coat zucchini. Top with cheese and tomatoes and allow to cook 10 more minutes.

  • Step 4

    Add olives

  • Step 5

    Serve with some quinoa and a tzatziki (recipe on my Instagram page @mypetitelunchbox)
