ingredients
- - 100 gr organic flour
- - 200 gr organic raw cane sugar
- - 150 ml organic coconut oil (odourless) or sunflower oil
- - 2 organic eggs
- - 2 organic large carrots (with peel, that’s why it is great)
- - 1 teaspoon of bicarbonate soda
- - 1 hand of nuts (walnuts, hazelnuts, pecan…)
- - Optional: 1 pinch of cinnamon (my kids aren’t keen so I avoid to add for them)
Method
Step 1
Mix all the ingredients excepts nuts in a powerful blender (Vitamix is definitely the best one)
Step 2
When the dough is smooth, add nuts and mix one more minute
Step 3
Allow to cook in the oven (160°): 1 hour for a large cake 30 minutes for cupcakes
Step 4
Allow to cool and store it in an hermetic box in your fridge (2-3 days). Even tastier the day after (during breakfast before kids go at school 😊)
