It may not have trickled down to your local theater yet, but popped seeds like quinoa, sorghum and amaranth have put popcorn on the back burner and taken the food blogosphere by storm. These amazing little super seeds add great crunch to a number of dishes (from sweet to savory and everything in between) and couldn’t be cooler to look at.

Cacao Quinoa Clusters

To make the quinoa clusters: take 1 cup puffed quinoa (you can make homemade puffed quinoa by heating a pot over medium-low heat. Add enough quinoa to cover the bottom evenly. Wait until you begin to hear a popping sound and continue to cook until most of the quinoa has puffed) 1/4 cup cacao nibs 1/4 cup chopped cashews (optional) 3-4 tablespoons coconut palm nectar (you can find this in most healthy food stores and some larger chains. Unlike its name, it does not taste like coconut but provides a hint of sweetness with a lower glycemic index) pinch sea salt Preheat the oven to 375 degrees. Mix all of the ingredients in a bowl until well combined. You want the quinoa mix to be sticky. Place on a baking sheet and bake for 10-12 mins. Let cool and try not to eat the whole batch!
