  • 2 tablespoons olive oil
  • 3 sprigs fresh thyme, divided
  • 2 teaspoons Better Than Bouillon Sautéed Onion Base
  • 1/8 teaspoon freshly ground black pepper
  • 1 teaspoon balsamic vinegar
  • 1 sheet frozen pre-rolled puff pastry, thawed according to package directions
  • 1 large egg, beaten with 2 teaspoons water (for egg wash)
  • 1 (10 ounce) wheel brie, top scored
  • 1 baguette, sliced and toasted, for serving

Method

  • Step 1

    Preheat the oven to 425°F.

  • Step 2

    Heat a large skillet over medium-high heat. Add olive oil and sliced onions. Reduce heat to low and cook, stirring occasionally, until onions turn golden-brown and caramelized, about 10-12 minutes.

  • Step 3

    Stir in thyme leaves and Better Than Bouillon Sautéed Onion Base. Continue cooking for 2-3 minutes, stirring to incorporate. If the mixture thickens too much, add 1 tablespoon of water to loosen.

  • Step 4

    Add balsamic vinegar and stir, scraping up browned bits from the skillet. Let the liquid bubble away, then remove the onions from the pan and allow to cool.

    On a lightly floured surface, cut the puff pastry into a circle large enough to fully wrap the brie.

  • Step 6

    Place the cooled onion mixture in the center of the puff pastry. Top with the scored brie. Wrap the pastry around the brie and onions, using the egg wash to seal. Pleat as needed to create a neat package, then place seam-side down in an oven-safe dish or cast-iron skillet. (If preparing ahead, cover and refrigerate overnight.)

    Brush the top of the pastry with egg wash, then sprinkle with cracked black pepper and thyme leaves. Bake for 15-20 minutes, or until the pastry is golden brown and crisp.
