ingredients
- 350 grams Firm Tofu
- 1 1/2 Zucchini
- 3/4 Red Bell Pepper
- 1 cup Green Beans
- 1/4 cup Shallots
- 1/2 juiced Lime
- 1 diced small Garlic clove
- 1 1/2 tablespoons Coconut Amino
- 1 tablespoon Maple Syrup
- 1 1/2 tablespoon Rice Vinegar
- 1 teaspoon Sesame Oil
- 1/4 teaspoon Cayenne Pepper
- 2 teaspoon Paprika
Method
Step 1
In container combine the coconut amino, maple syrup, rice vinegar, sesame oil, cayenne, garlic (diced small) and paprika.
Step 2
Press then cube the tofu and add this to the container and mix well. Place the container in the fridge with the lid on for at least 30 minutes, the longer the better.
Step 3
Slice the capsicum, chop the zucchini and the cut it down the center, remove the ends of the beans and cut them in half.
Step 4
In a pan on a medium/high heat add the tofu and the marinade sauce and cook for 5 minutes. Add in the vegetables and cook for another 3 minutes or until the sauce starts to dry up.
Step 5
Squeeze some lime over the top and top it with some shallots and serve it with some noodles, rice or quinoa.
