Mandarin gingerbread cake

ingredients

  • 100 milliliter aquafaba
  • 50 g cane sugar
  • 70 g flour
  • 20 g almond milk
  • 20 g vegan butter
  • 3 milliliter vanilla extract

Method

  • Step 1

    Preheat the oven 365 F.

  • Step 2

    Whisk aquafaba, sugar, salt, vanilla and molasses.

  • Step 3

    Add sifted flour and gingerbread spice to aquafaba batter. Add milk and butter.

  • Step 4

    Bake 25-30 min. or untill ready. Set aside to cool completely.

  • Step 5

    Mandarin Puree Combine mandarin puree(300g), sugar (20g) and agar-agar (2tsp). Boil for 5-10 min. Pour into round pan and put it into the fridge for 30 min.

  • Step 6

    Cheesecake mousse Whisk cream cheese (150g), youghurt (50g) and sugar( 50g). Add agar-agar (1tsp) and lemon juice (1tsp).

  • Step 7

    Mandarin Jelly Combine mandarin juice, sugar and agar-agar. Boil for 5-10 min.
