These chia pudding cups with the juicy blueberry compote are like summer in a jar that you can enjoy any time of year. Made with Cascadian Farm Frozen Blueberries, you can layer the blueberries and chia pudding, or mix some of the compote straight into the chia pudding for a brilliant purple snack or breakfast (of course, I recommend adding even more of the blueberries on top – can’t get enough!).

This blueberry chia pudding is a blend of creamy chia seed pudding and sweet, tangy blueberry compote. It's a perfect make-ahead breakfast or snack that's loaded with fiber, protein, and antioxidants. The blueberries add a burst of flavor and freshness. Serve it layered or mixed, topped with crunchy granola and a dollop of yogurt for added texture and taste.

For the Chia Pudding

  • 6 tablespoons chia seeds
  • 1 3/4 cup plant-based milk
  • 1/2 scoop vanilla protein powder
  • 2 tablespoons maple syrup

For the blue berry compote

  • 2 cups Cascadian Farm Frozen Organic Blueberries
  • 2 tablespoons maple syrup
  • Juice of ½ lemon
  • 1/4 teaspoon vanilla extract
  • 1/2 teaspoon arrowroot powder (or cornstarch) + 1 tablespoon cold water, whisked until combined
  • Granola (optional), for topping
  • Yogurt (optional), for topping

Method

To make the chia pudding

  • Step 1

    Combine chia seeds, plant-based milk, protein powder, and maple syrup in a bowl or glass container. Whisk well to combine, then refrigerate for at least 4 hours or up to overnight, stirring once or twice.

To make the blueberry compote

  • Step 1

    In a saucepan, heat Cascadian Farm blueberries, lemon juice, maple syrup, and vanilla extract, and simmer for 5-10 minutes until juicy.

  • Step 2

    Combine arrowroot powder with the cold water and whisk until well incorporated. Add to blueberry compote. Allow to thicken for 1-2 minutes, then remove from heat.

  • Step 3

    Layer the chia pudding in a clean glass or jar, add a layer of chia pudding, followed by a layer of compote, then repeat until the glass is full.

  • Step 4

    Top with granola, yogurt, and additional compote. Store covered in the fridge for up to 5 days.
