ingredients
- 1 1/2 cups Flour
- 1/2 teaspoons Baking Soda
- 1/2 teaspoons Baking Powder
- 1/8 teaspoons Salt
- 1 1/4 cups Sugar
- 1/2 stick unsalted Butter
- 3 Eggs
- 1/3 cups Greek Yogurt
- 2 tablespoons Lemon Juice
- 1 zested Lemon
- 1 cups Powdered Sugar
- 3 teaspoons Lemon Juice
- 3 teaspoons Buttermilk
Method
Step 1
Preheat your oven and grease a standard loaf pan. Set aside.
Step 2
In one bowl combine flour, baking soda, baking powder, and salt.
Step 3
In a separate bowl use an electric mixer to combine sugar and butter. Then, mix in eggs, greek yogurt, lemon juice, and the zest of 1 lemon.
Step 4
Add this mixture to the first bowl of dry ingredients and gently combine.
Step 5
Pour into greased loaf pan and cook for 40 minutes or until a toothpick and be cleanly removed.
Step 6
Once done, remove from pan and all too cool on a wire cooling rack.
Step 7
While cooling make your lemon Icing by combining powdered sugar, lemon juice, and buttermilk.
Step 8
Once loaf is fully cooled pour icing on loaf. Cut into desired sized slices.
