ingredients

  • 1 pack Beyond Mince
  • 1 can drained and rinsed Kidney Beans
  • 1 cup chopped Fresh Ramps
  • 1 cu chopped Swiss Chard Leaves
  • 1 cup chopped Swiss Chard Stems
  • 1 tabelspoons whole Fresh Cilantro
  • 3 tablepoons Cooking Oil
  • 1 teasopon Ground Sumac
  • To Taste Salt
  • thinly sliced Radish

Method

  • Step 1

    Using the same pan, add 1 tbsp of cooking oil and then the beyond meat ground beef 1 tsp of sumac and cook for 2-3 minutes or until it has slightly crisped up and browned.

  • Step 2

    Then add the canned beans to the pan and cook for about 1 minute just to warm up the beans. I didn’t mind the brine from the canned beans, I also added a little bit of water to the pan to help make a sauce.

  • Step 3

    Add the cooked swiss card stems back to the pan, chopped ramps, and swiss chard leaves, cook for an additional 30 seconds or until the greens are slightly wilted (softened).

  • Step 4

    Remove the pan from the heat and plate.

  • Step 5

    Plate the cooked veggie and beyond meat mixture onto a plate and top with fresh herbs or micogreens and garnish with some radish.
