Turkey Meatballs with Lemony Herb Dressing and Greek Yogurt
Springy and full of herbs, these turkey meatballs are super tender and light as a feather because you parboil them (I know sounds nuts!) and then sauté them just before serving. -@petersom

  • 2 pounds ground turkey
  • 2 hot italian sausages
  • 1/2 cup grated Romano cheese
  • 1/2 cup breadcrumbs or gluten free breadcrumbs
  • 1/3 cup minced onion
  • 1/4 cup chopped basil
  • 1/4 cup chopped parsley
  • 2 garlic cloves, grated or minced
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon ground pepper, divided
  • 1/2 teaspoon ground fennel seed
  • 2 large eggs
  • 2 quarts chicken stock, or water
  • 1 cube bouillon, optional
  • 1 tablespoon unsalted butter
  • 2 tabelspoons olive oil
  • 1 cup store-bought or homemade pesto
  • 1 tablepoon dijon mustard
  • 1 tablespoon lemon juice
  • 1 teaspoon honey
  • 1/2 cup chopped soft herbs such as basil, parsley and dill
  • 1 teaspoon water
  • 3 cups Greek yogurt
  • fleur de sel, for finishing
