Thyme And Goat Cheese Muffins With Fleur De Sel
The humble muffin... Or is it. I'll let this Thyme and Goat Cheese Muffin with Fleur de Sel, speak for itself.
2 C. (250g) Flour
1 1/2 Tsp. Baking powder
1/2 Tsp. Baking soda
1 Tbsp. Sugar
1 Tsp. Kosher salt
1 Tbsp Fresh thyme, leaves removed from stem and chopped
3 Tbsp. Finely chopped flat leaf parsley
3 1/2 oz. (100g) Goat cheese, crumbled
1 large egg, beaten
1 1/4 C. (310ml) *Sour milk
3 Tbsp. Butter, softened
1 1/2 Tbsp. Butter, melted Fleur de Sel
Preheat oven to 400 degrees F. Sift flour, baking powder, baking soda, sugar, and salt into a large bowl. Cut the 3 Tbsp of softened butter and the goat cheese into the dry ingredients until well blended. Add remaining ingredients; mix gently until blended.
Spoon mixture into lightly greased muffin tins. Bake 15-18 min, or until toothpick inserted comes out clean. Turn out onto wire rack. While muffins are still warm, brush the tops with melted butter and sprinkle with Fleur de Sel.
