INGREDIENTSNacho Meat: 1 lb grass fed ground beef or turkey ½ onion, diced 2 cloves garlic, minced 1 cup black beluga lentils, cooked ½ cup water ½ cup tomato paste 1/8 cup coconut oil 1/8 cup raw honey 1 tsp cumin ½ tsp chili powder Salt and pepper to tasteToppings:Spring greensGoat cheeseLemon HummusDIRECTIONS Heat large stock pot to medium heat with 1 Tbsp coconut oil. Saute onions until translucent and soft, about 8 minutes. Add the ground beef and garlic, and cook through until no longer pink. In a bowl, whisk together water, tomato paste, coconut oil, honey, cumin and chili powder. Add sauce mixture to meat, along with the cooked lentils. Season to taste. Cover and simmer for about 20 min. Spoon over your favorite chips. Top with your favorite spring greens, goat cheese, a squirt of lemon and a dollop of hummus.Note: This meat can be used in a variety of ways, including Sloppy Joes.
