Bring salmon to room temperature and pat dry. Drizzle a little oil on baking sheet. Place filet on top of the oil and season with a little salt. Spread a very thin layer of mayonnaise on top of the filet, then sprinkle a generous amount of lemon pepper over the mayo. Top it off with the Shaved Parmesan. Broil in the oven on high for approximately 8 minutes (for a 1" thick filet) or until golden and bubbly. This will also depend on the size of your filet. If it needs to cook a little longer, and it's getting too dark on top, just turn off your oven and leave it inside for a few more minutes.
