Brownies With White Chocolate Mousse And Strawberries
Fathers Day calls for left over brownies topped with white chocolate mousse and strawberries... Yep. Can't go wrong with serious deep dark chocolate even on day 2... (That's what a freezer is for right?) Dessert #2 from yesterday's luncheon was still the highlight of today... Sorry, but not sorry.
White Chocolate Mousse
3/4 C. Cream
1/4 C. Sugar
2 Tsp. Cornstarch
2 Egg yolks
6 Squares white chocolate
1 Tsp Vanilla
3 C. Cool whip or slightly sweetened and stiffened whipped cream.
Mix together sugar and cornstarch; stir in egg yolks. Heat cream till it boils. Take a little bit of the hot cream at a time and add it slowly over the egg mixture, stirring constantly. Once it's all incorporated, return to heat and bring mixture to a boil until it reaches 160 degrees and thickens up. Remove from heat and stir in the white chocolate and vanilla. Let cool. Fold carefully into Cool Whip. Refrigerate. Serve over individual brownies and top with strawberries.
