As promised a neat little trick to making an amazing fruit buttercream! If you are familiar with using fresh fruit in frosting, you know that it can be difficult to get the right consistency and texture. I have learned that using freeze dried fruit in place of fresh gives you a more intense flavor and enhanced color! No food dye necessary!
5 oz. Cream cheese
3/4 C. Butter
1 1/2 C. Freeze dried blueberries
1/2 Kg. Icing sugar (give or take)
1 tsp. Vanilla
1 1/2 Tbsp. Lemon juice
Grind blueberries in food processor or blender into powder.
Place softened cream cheese and butter in the bowl of an electric mixer and beat until creamy, about 30 seconds.
With the mixer on low, add ground blueberries. Mix well. Now slowly add the sugar scraping down the sides of the bowls as necessary.
Add the vanilla, lemon juice and increase mixer speed to medium. If frosting is too thick, add heated cream 1Tbsp at a time, until desired consistency is reached. Blend until frosting is fluffy, about 1 minute.
