For shits and giggles, I made a farce Pithivier. Shortcrust pastry filled with veal, pork, pork fat, onion, cabbage, panade, tarragon and chervil—all wrapped in a cabbage leaf. Juicy AF. And no soggy bottom. Basically the filling for Choux Farci.
