"With the days getting colder, shorter and yet busier (the deadline for my cookbook manuscript is peaking at the horizon!), I have been yearning for quick and easy meal ideas. And right now, I am on a French "Pascade” roll. A Pascade is a wonderful French-style Dutch Baby Pancake that is generously puffy and versatile, and ideal for a last-minute lunch or dinner. You can make it plain or add some cheese and herbs in the batter for a deliciously savoury twist. Or you can sneak a spoonful of sugar and enjoy it for dessert, topped with stewed fruits and/or yogurt. Oh, and when the pascade is still hot out of the oven, I like to lightly brush melted butter all over it, of course! . .
