Roasted Cauliflower Quinoa Salad
One of my favourite salad combos for lunch. roasted cauliflower, chickpeas and sunflower seeds with quinoa , red onion, massaged kale , olive oil and radish sprouts. Mmm mmm ☀️ does not feel like winter on the Gold Coast today !<br><br>RECIPE:<br><br> Cauliflower - 1 small / 1/2 large head <br> Sunflower seeds - 1/2 cup <br> Chickpeas - 3/4 cup cooked from scratch / canned <br> 1/2 tsp cumin powder <br> Ghee - 1 tablespoon <br> Quinoa - 1/2 cup (cooked) <br> Red onion - half (finely diced)<br> Kale - 4 kale stems<br> Sprouts - 2 good handfuls<br> Salt and pepper - good sprinkle of both<br> <br> Apple cider vinegar - 3 tbs<br> Olive oil - 2 tbs <br> Lemon juice - 1/2 lemon <br><br> Preheat oven to 200 degrees celsius <br> Cut cauliflower into florets and place on a baking tray<br> Add chickpeas and sunflower seeds to the tray, toss in ghee, salt and pepper and cumin <br> Roast for 40 mins <br> Cook quinoa and set aside <br> Dice red onion<br> Massage the kale in lemon juice and olive oil <br> Combine onion, kale, quinoa, cauliflower, chickpea, sunflower seeds in a big salad bowl <br> Add the dressing of apple cider vinegar, olive oil and lemon, more salt and pepper if you want<br> Top with radish sprouts and enjoy ! <br><br> *pomegrates also make a nice touch
